Steak Tacos - 2 Ways

These Steak Tacos are delicious, tender & juicy! The marinade will inspire you with the fragrance and aroma it has. Pick your favorite cut of beef and enjoy every step of this recipe. Serve as an entrée or make tacos.

Ingredients

Meat

  • 2 lbs flank steak or skirt steak Arrachera

Marinade for Grilled Version

Dry Rub for Cast-Iron Version

  • 1/4 cup oarse kosher salt
  • 1/4 cup brown sugar
  • 2 tbsp smoked paprika
  • 2 tbsp garlic powder or granulated garlic
  • 1 tbsp fresh cracked black pepper
  • 1 tbsp dried cilantro or Mexican oregano
  • 2 tsp ancho chili pepper
  • 1 tsp cumin

Taco

  • 8 Corn Tortillas Yellow or White any size
  • 1 Cup Shredded Cabbage or lettuce
  • 1 whole sliced onion of your choice grilled (optional)
  • 1 Red Bell pepper de-seeded and sliced thinly grilled (optional)
  • 1 Cup Diced Pineapple optional garnish
  • Salsa of your choice Cilantro, Hot Sauce, Avocado, optional garnish

Instructions

  • Mix ingredients for marinade or dry rub
  • Marinade Beef or dry rub and place in zip lock bag - the longer the better tenderness - Minimum 1 hour or overnight
  • Preheat BBQ or Oven Broiler - Cast Iron pan for dry rub
  • BBQ or Broil Beef fast till almost black on the outside and rare on the inside (150 degrees F internal temperature, 6-8 minutes per side). If BBQ, use natural wood smoke to enhance the flavor.
  • Let meat rest for 10 minutes and steam or microwave tortillas.
  • Grill onions and optional bell peppers or cook in cast iron drippings for 2 minutes
  • Slice meat against the grain, assemble tacos with your choice of lettuce, cabbage, and garnishes
