BBQ or Broil Beef fast till almost black on the outside and rare on the inside (150 degrees F internal temperature, 6-8 minutes per side). If BBQ, use natural wood smoke to enhance the flavor.
Let meat rest for 10 minutes and steam or microwave tortillas.
Grill onions and optional bell peppers or cook in cast iron drippings for 2 minutes
Slice meat against the grain, assemble tacos with your choice of lettuce, cabbage, and garnishes
