Make the baked potatoes, then drain mash and add butter
Add frozen peas and carrots to the top of the lamb mixture. Cover completely
Fill a plastic bag with the potato mixture and squeeze mashed potatoes onto the top covering all the vegetables
Cover the mashed potatoes almost completely with the sharp white cheddar cheese.
Bake at 375 f for 30 minutes or until the potato mixture looks browned
Remove and let it rest 15 minutes before cutting and serving
