Tumeric Roasted Cauliflower

This easy roasted cauliflower is a fantastic side to pasta, meat, or seafood. It also makes a great healthy snack.

Ingredients
  

  • 2 tablespoons olive oil or coconut oil or grapeseed oil
  • 1 teaspoon turmeric
  • 4 medium garlic cloves
  • 1 teaspoon cumin seeds
  • 1 large cauliflower about 2½ – 3 pounds, cut into medium florets
  • 1 teaspoon salt or to taste

Instructions
 

  • Preheat oven to 450 degrees F.
  • Chop the cauliflower into florets. Peel and mince the garlic.
  • In a large bowl, mix the cauliflower and garlic with the olive oil, cumin, turmeric, salt.
  • Line a large baking sheet with parchment paper or a silicone mat, then place the cauliflower in a single layer on the baking sheet.
  • Gently turn the cauliflower from time to time until they are tender with golden brown spots all over, about 25 to 30 minutes.
